I am told by a reputable source that polyester resin products work well for interior applications, but do not weather well in exterior applications. It would be a short term solution. Any further comments?

Polyester works great as long as you know how and where to use it.
For this job, I would go with an epoxy.

	epoxy EPOXY A two part resin with superior adhesion properties used for joining and filling stone. Also used for grouting stone and tile.

Polyesters are not UV stable and absorb water so they should never be used outside.
