Thanks. Here's what I've heard in case you find it handy....
If you want to try to go back to the original look/color, you MIGHT be able to use acetone (can get at Home Depot), though it might ultimately be easier to sand the upper oil layer off.
I've found a sealant advertised called "Spray and Seal" and can be purchased from www.stonecare.com. The misnomer with "sealant" is that the soapstone is actually not being sealed or protected because it does not absorb anything but topical. Therefore this "sealer" just sits on the surface of the stone and dries over time to provide a barrier of protection from wet spots and oil marks. Supposedly this particlar product also will NOT darken the stone. (Immediately upon application it will darken the stone but by taking a dry rag and lightly rubbing the sealer off it won't darken it...I'm guessing it will a little bit at least but hopefully not much).

If you apply this stuff annually it's supposed to prevent much of the normal darkening of the stone due to natural oils that over time get deposited.
