I would do the job but get paid up front and if you cannot make the customer happy about the seam refund the money to the fabricator. Most times if a customer is not happy it is for more than one thing so only guarantee that fix.
You never know they may end up being a regular customer now that they know it is possible to top polish. Or, get the guy up here for a class and teach him.
CA, gray sharpie, and silver metallic sharpie works great to fill a seam on that stone - it also helps if you grind different directions to create crystal flake look. Of course you also need to know how to polish CA. The seam will be so invisable it will make you sick. I did a top in it recently - even I lost the seam when it was done. I kick myself for not having my camera that day.
