UPDATE:
So the guys from my granite company responded immediately and sent their "best" installer back to my house last night to correct the seam. After about two hours and alot of buffing I ended up with a much nicer seam.

I'm happy with it (happier anyway). It's less noticeable and totally level now.
If you guys can make this seam "disappear", as I've seen in some of your other work, I definitely want you to do the work. Well worth the price you quoted me. If this is as good as it's going to get, I'll live with it.
